It is the exact moment when the summer sea breeze strikes the slopes of the Greek islands and Mani, where sage roots itself among the rocks and bathes in the scorching sun. To capture this feeling inside a cup, we traveled and selected harvests from regions with unique microclimates, where the plant is forced to produce the highest concentrations of essential oils.

Brewing Guide

To fully release the rich essential oils and aromas of the whole leaves, follow the traditional ritual:

Hot Brew

Quantity: Use 1–1.5g (approx. 3-4 whole leaves) for every 250ml cup. (Sage is very rich, so a small amount goes a long way).

Temperature: Heat fresh, clean water to 90°C–95°C. (Avoid prolonged boiling at 100°C to prevent the brew from becoming astringent or overly bitter).

Time: Place the product in the water and let it steep for 4–5 minutes. Covering the cup is essential to keep the volatile aromas inside your drink.

Strain & Enjoy: Ideal completely plain to experience its robust character, or add a small spoon of pure Greek thyme honey which complements it perfectly.

Cold Brew

Shock Ice: Brew using double the amount of leaves in hot water (steep for 4 minutes), then pour immediately into a glass full of ice for an instantly invigorating, iced Mediterranean infusion.
